Oatmeal is one of my favourite things for breakfast, especially because you can jazz it up in so many different ways to give it a totally different flavour.
The other day I thought I would try throwing in a big scoop of pumpkin puree with a few other spices and it was so good!
In a small saucepan combine:
1 cup water
1/3 cup rolled oats
dash salt
Bring to a boil then reduce heat and simmer. Stir occasionally, until you reach desired consistency, about 3-5 minutes.
Remove from heat and stir in:
heaping Tbsp. pumpkin puree
1/2 tsp. cinnamon
splash vanilla
pinch nutmeg
Optional toppings to sprinkle on top or stir in:
pecans
raisins
maple syrup
coconut
hemp seeds
ground flaxseed
