Super Easy Lazy Cabbage Rolls

July 12, 2021 by Jacquie

This is my quick and easy go-to meal that’s delicious and makes enough that I only have to cook once a week! Yeah, it gets boring, but whatever, it’s good 🙂

cabbage, ground meat, tomatoes, rice and onion

Cook 1/2 cup brown rice in 1 cup water. You know how to make rice, I don’t have to spell it out.

Then in a stock pot cook up 1 lb. ground meat of some kind and 1 onion. Any kind of onion. Probably I should be more particular but I don’t care. All the onions taste the same to me.

Then add 8 cups of sliced cabbage, a pile of diced tomatoes, or maybe a can of tomatoes and some pasta sauce or tomato paste. Doesn’t really matter, just a bunch of tomatoey stuff. Add some salt and pepper, whatever you think is good.

Then cook it till it seems done. Add the rice in (unless you’re trying to go grain-free, then just don’t) and bam, supper is ready for the whole week.
